  6. I am a little late to the party this week! I made my dish into a vegetarian version with king oyster mushrooms, shitake mushrooms, eggplant, red pearl onions, and green beans. I whipped up some polenta cakes (pages 81-82 of The Food Matters Cookbook) and served the stew over the polenta. It was very rich and versatile–I could see serving it on mashed potatoes, pasta, grains…anything.
