  2. Lena, your dish looks amazing! I wish I could have made it. I had cooked black beans on hand and am in the middle of two back to back business trips so I made black bean and quinoa cakes with avocado cream, inspired, of course, by Life With the Lusher’s post a few weeks back. I’ve been meaning to make it ever since I saw their black bean cakes with corn salsa and avocado cream. Wow–really delicious! I’m looking forward to making the fritters some time soon but in the meantime, here is my bean and veggie variation:
