  4. My beet chips were a bit too thin so they shrunk a lot… too much to make a sandwich out of them. Sometimes a mistake turns out delicious, though! I sprinkled them over heirloom tomatoes and Fifth Floor Kitchen’s walnut pâté as a replacement for the goat cheese (which was amazing), since I can’t do dairy. Thanks for picking a beet recipe, Meg — I was reminded how much I love them. And it looks like other people had more luck with the chips, so I’m going to try them again with the leftover beets later this week.
