Jenn, thank you so much for choosing a delicious, summer recipe! I made tamale pancakes topped with the salad and Mexican style crabmeat. This is one of our best summer dinners thus far!

I added some additional veggies and iceberg lettuce and topped it with a boiled egg. Going on vacation means you have to empty your fridge 😉 Love the recipe!

I loved that this was such a flexible meal — I love seafood and my boyfriend hates it, so I made swai for mine and chicken marinated in salsa for his. (He complained that he didn’t get a fancy plate like mine when I served it, but his wasn’t going in the post!)

We made some grilled mahi-mahi ceviche in tribute to a trip to Peru and ended up eating the whole thing as a dip with plantain chips. Delicious! Thanks for the inspiration!

Yum! I love love love fresh corn. I also am on a cold soup kick since the temps have been triple digits. So, I decided to turn the salad into Chilled Avocado and Roasted Corn Chowder. Dub Yum.

This recipe reminded me of a favorite from summer’s at my parents’ house! Topped my salad with fresh fruits, veggies and an asian marinated grilled pork tenderloin. Enjoy!

Sorry, I was late to the party and even later to share the link! I ended up making salad wraps in cabbage leaves, with nothing seared on top. I made the corn salad twice, subbing lime juice and raw corn for the orange juice and cooked corn in the second try. I thought the orange juice was way too sweet, did anyone else feel that way?

I thought it probably would be, so I used just a splash of orange juice and subbed lemon juice for the rest of it, but I didn’t try it the original way.
