  2. Good morning! Back in the day I made many roasted veggie platters served with romesco for date nights. It has been a long time since I made this so was thrilled to return to one of my favorite meals (albeit with good girlfriends this time) so thank you so much for the pick this week, Mireya! My take on it includes a platter of roasted farmer’s market vegetables. I also served it with some chimichurri because now I am hooked on that too! 🙂
