I used collards instead of spinach (it just happened to be what I had on hand) and loved the Asian flavors of these burgers. Great pick, Matt and Claire!

I tried to swap the tofu out for tempeh and it totally didn’t work 😦 Oh well! I am enjoying seeing everyone else’s successes and now I will surely have to try again with tofu!

I made mine inspired in part by Bittman and in large part by 101 Cookbooks. Mine were tofu, nuts, spinach, and seasoned with cumin, soy, and cayenne. Next time I’m going to make them Greek-Style with feta cheese, oregano, lemon, and some sauteed onion thrown into the mix! But these were quite good and I’m not disappointed–I’m always looking for more veggie burger recipes! Thanks to Matt and Claire!
