Spicy Fried Rice with Bean Sprouts, Chicken and Peanuts by this week’s host, Keely of Keely Marie.

Thanks to Keely for choosing this week’s recipe – Only two of us cooked this week, everyone else really missed out. Keely loaded her stir-fry with lots of veggies and served it over purple rice! I followed the recipe but served it over a bed of kaffir lime leaves for extra flavor. Hope you guys try it, we really loved this recipe.

Week 70 in Review

Cannellini with Shredded Brussels Sprouts and Sausage by this week’s host, Erin of The Goodness Life.

Thanks to Erin for choosing this week’s recipe – This recipe made such a tasty main course. Even Brussels Sprouts haters would like this dish. It was versatile too. Amaranth greens worked well as a substitute for the Brussels Sprouts and Keely used lentils instead of cannellini beans and served it over farro.

Week 69 in Review

Memorial Day weekend and a wild card posting. We posted some of our favorite Spring/Summer healthy recipes.

Anita posted a Raw Strawberry Cake that sounds so healthy and good. Keely posted her mother’s famous recipe for Calico Beans. That recipe is on my to do list! I posted my summertime favorite recipe for a Watermelon and Blueberry Salad. Margarita posted her Chocolate Cherry Panini recipe and also some great sounding recipes using the wonderful summer tomatoes that are starting to show up in the market. Sandra shared her recipe for Lentil Rice Chili, a perfect main or side dish this summer and Evi made yummy Potato and Corn Fritters.

Chocolate Tofu Ice Cream by this week’s host, Meg of Fledgling Foodie.

Thanks to Meg for choosing this week’s recipe – Chocolate ice cream from tofu! A great recipe that inspired a Kumquat Orange Sorbet, Strawberry Cabernet Sorbet and a Chocolate Banana Ice Cream. We loved this recipe, perfect as we head toward summer!
